Who doesn't love fried fish? Whether you are a fan of the Friday night fish fry or you are more of a casual fried fish lover, it is a dish which most people enjoy. If you are one of these people, just about the only thing that could make fried fish even better is to make them into tacos.
As it happens, fried fish tacos (tacos de pescado) happen to be very popular in certain parts of Mexico; and since they are so good, they have started to become more common at taquerias and Mexican restaurants in the US as well.
You do not have to pay a visit to your local taqueria to enjoy some excellent tacos de pescado, however. You can make them yourself at home relatively easily; as long as you don't mind doing a little bit of deep frying in your kitchen, then you're ready to make some fried fish tacos which will make you the most popular person in your social circle.
Ingredients -
Batter:
1 cup all-purpose flour
2 tablespoons cornstarch
1 teaspoon baking powder
½ teaspoon salt
Black pepper, to taste
1 egg
1 cup beer (your choice, though lagers and pilsners are generally best for beer batter)
1 quart vegetable oil for frying
1 pound cod fillets, cut into 2 to 3 ounce portions
1 (12 ounce) package corn tortillas
Shredded cabbage, sliced radishes, chopped cilantro and onions, salsa, lime wedges, and diced jalapeno, for serving
Preparation:
Start by mixing together your batter and pour a little flour onto a large plate (about ¼ inch deep) while the oil heats.
Dip each of your cod filet pieces in the batter, then roll in flour to coat and fry until golden brown.
Serve on warm corn tortillas topped with chopped cilantro and onion, with salsa, sliced cabbage and radishes and lime wedges on the side.
