Spiced Pulled Pork Tacos with Cilantro

If you have ever tried pulled pork tacos, or pull pork tacos, you will know that pork is a great meat to use in Mexican recipes. It might not be the most widely used meat in Mexican cuisine because chicken and beef tend to more popular, or fish in the coastal regions, but pork does go well with Mexican seasonings and flavors.

You need to start these shredded pork tacos the day beforehand because the pork needs to chill overnight, coated with a spicy rub. Cooking the pork the following day in apple juice makes it beautifully tender and these tacos are served with onion and cilantro on the side. This is a simple garnish because the wonderfully tender shredded pork has plenty of flavor already.

You can cook the pork in a crockpot if you like, because the results will be the same as if you bake it. This is a great meal to make if you want to eat something warm and filling in front of the TV or if you want to make something fun because you have friends or family coming over. Pulled pork tacos are succulent and tender and everyone will be impressed with these juicy and flavorful tacos.

Tender Shredded Pork Tacos

Ingredients -

3 lbs pork shoulder
3 tablespoons smoked paprika
½ cup salt
3 cups apple juice
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoons crushed red pepper
2 tablespoons sugar
2 tablespoons black pepper
3 cups water
2 cups Mexican cheese, shredded
12 corn tortillas
Fresh cilantro and thinly sliced raw onion to serve

Preparation:

Mix the spices together and rub them over the pork shoulder. Wrap the meat tightly in plastic and put it in a bowl to catch any dripping liquid. Refrigerate it overnight.

The next day, preheat the oven to 350 degrees F. unwrap the pork and put it in a large baking dish with the apple juice and water. Cover the dish tightly with foil and bake it for 5 or 6 hours, until tender.

Remove the foil and cook for another 20 minutes to crisp the top of the pork. Remove from the oven and rest for 30 minutes.

Put the tortillas in the oven to warm.

Shred the pork with a fork to make the pulled pork and serve it in the corn tortillas with sliced onion and fresh cilantro.

Serve the grated cheese on the side.
