Heart-Healthy Ground Turkey Tacos

One of the greatest things about tacos is just how simple they are. A warm corn tortilla with the filling of your choice, topped with diced onions, cilantro and salsa and you have a wonderful snack or meal, simple as that. There is nothing complicated about making tacos - and of course, eating them is one of life's greatest and simplest joys.

Turkey may not be the first filling you'd think of when tacos are on your mind, but it's actually a traditional ingredient in Mexican cuisine; in fact, dishes much like this turkey tacos recipe were enjoyed by the indigenous people of Mexico long before the Spanish ever arrived in the new world. It makes for a nice change of pace from the usual beef, chicken, or pork and it is a healthy substitution as well.

Ground turkey is widely available and inexpensive, making it a great stand-in for ground beef in tacos and really, just about any other dish you could name which normally calls for beef. Try it in this easy taco recipe and you may find yourself coming up with other ways to use this very traditional Mexican ingredient.

Turkey Tacos

Ingredients -

1 lb ground turkey, crumbled and browned
9 corn tortillas
1 white onion, diced
1 small bunch cilantro, chopped
1-2 jalapeno peppers, diced (adjust quantity to taste or remove seeds and ribs to reduce heat)
Mixed spring greens, enough for a few leaves per taco
Salsa and lime wedges, for serving

Preparation:

Brown the turkey in a skillet (along with a little bit of diced onion, if you like) and warm the tortillas. Chop the onion, peppers, and cilantro, slice limes into wedges and wash the greens. Fill each tortilla with ground turkey, onion, cilantro, jalapeno and a few leaves of spring greens. Serve with salsa and lime wedges and enjoy hot.
