Vegan Black Bean Tacos

While many people think of tacos as a dish which always contains meat of some sort, whether pork, beef, or chicken, this is by no means always the case. Many taco recipes actually contain no meat whatsoever - or dairy, for that matter.

This black bean taco recipe is entirely vegan, which is to say that it contains no animal products at all. No meat, no cheese, but plenty of flavor and nutrition. It is also easy enough to make that you can whip up a batch of these tacos in a matter of minutes and have a healthy, delicious snack or dinner in a flash.

Black beans have a hearty, subtly earthy flavor which matches perfectly with hot peppers, tomatoes and onions as well as cilantro - meaning that they make a perfect pair with salsa and other traditional taco ingredients and toppings. Give these black bean tacos a try and you may find that you really do not miss the meat, even if they do not convince you to make the switch. They are more than good enough to satisfy a confirmed carnivore.

Black Bean Tacos

Ingredients -

2 cans refried black beans
12 corn tortillas
1 tbsp olive oil
1 white onion, diced
2 cloves garlic, minced
2-3 jalapeno or Serrano peppers, diced
1 small bunch cilantro, chopped
2 tsp cumin
1 tsp oregano
1 tbsp olive or vegetable oil
Salt and black pepper, to taste
Salsa and lime wedges, for serving

Preparation:

Chop all of the vegetables, then heat the oil in a skillet over medium heat.

Sauté the garlic, along with a little of the onion and one of the jalapeno or Serrano peppers until the onion and garlic turn translucent, stirring occasionally.

Add the refried beans, cumin, and oregano and cook until heated through, stirring regularly to avoid burning.

Season to taste with salt and black pepper.

Warm the tortillas and top with beans, onion, cilantro, jalapeno and serve at once with salsa and lime wedges.
