Tasty Spinach Quesadillas

These spinach quesadillas are fast and easy, using only three basic ingredients. However, do not be fooled by their simplicity. This easy Mexican recipe turns out an appetizer that is crisp, creamy, and delicious in only a little time. It is also easy to adjust this recipe to make it something a little different. Just change which kind of cheese you use (stick to a good melting cheese) or use one of the newer flavored flour tortillas to add new tastes.

It does not take a lot of effort, and the results are fantastic. Try this Mexican recipe as a snack, as an appetizer or party treat, or as a side dish with a Mexican themed dinner. It even makes a good light lunch. You will love these quick and easy spinach quesadillas.

 

Simple, Fast Spinach Quesadillas

 
Ingredients -
 
1 lb frozen cut leaf spinach, thawed and drained well, or fresh spinach, washed and patted dry
2 cups cheese, shredded - Gruyere and Havarti are ideal
10 large flour tortillas
 
Preparation:
 

Press spinach between paper towels or hand towels to remove any remaining moisture. Then sprinkle five tortillas with cheese and layer on all the spinach. Top with remaining cheese and an additional tortilla. Press gently to flatten.

Over medium heat in a large skillet, cook each quesadilla for two to three minutes per side, or until cheese, melts and tortillas become crisp. Press each gently with a spatula as it cooks. Cut into wedges or serve as is. Garnish with salsa and sour cream.
