Crispy Shrimp Quesadillas

These versatile shrimp quesadillas can be cut into wedges to make a mouthwatering appetizer or served whole as a satisfying main dish. Unlike various other Mexican recipes these quesadillas are assembled before being fried on both sides.

With Mexican fajita recipes, for example, the filling ingredients are usually cooked before being wrapped in warm tortillas. These shrimp quesadillas can be served as they are or with some guacamole, salsa and sour cream on the side so that people can help themselves. Quesadillas are a popular Mexican recipe and this recipe for quesadillas will not disappoint.

 

A Simple and Easy Mexican Shrimp Quesadillas

 
Ingredients -
 
½ cup cooked shrimp, coarsely chopped
4 flour tortillas
1 cup Monterey Jack cheese
1 tablespoon finely chopped cilantro or parsley
¼ cup green onion tops, thinly sliced
 
Preparation:
 

Sprinkle half of each tortilla with cheese, onions, shrimp and cilantro or parsley.

Fold the tortillas in half and cook them in a lightly greased skillet over a medium heat until they are golden brown all over.

Cut each tortilla into 4 wedges to serve.

(Serves 16 as an Appetizer or 4 as a Main Course)
