Ingredients -
½ cup cooked shrimp, coarsely chopped
4 flour tortillas
1 cup Monterey Jack cheese
1 tablespoon finely chopped cilantro or parsley
¼ cup green onion tops, thinly sliced
Preparation:
Sprinkle half of each tortilla with cheese, onions, shrimp and cilantro or parsley.
Fold the tortillas in half and cook them in a lightly greased skillet over a medium heat until they are golden brown all over.
Cut each tortilla into 4 wedges to serve.
