This recipe is a combination of quesadillas de champiñones, which means mushroom quesadillas, and pork quesadillas. Pork is eaten in Mexico but because beef, chicken and even fish tend to be more popular, it is not one of the most widely eaten recipes, although this spicy pork and mushroom Mexican quesadillas recipe is really good and well worth making. With quesadillas, pork is a flavorful ingredient to use in them.
With this quesadilla recipe, the flavors of pork, mushrooms, and onion are combined with oregano, cilantro, garlic, and cumin for a spicy flavor. The cheese finishes it off nicely. Like many Mexican quesadillas recipes, this one is simple to make and the results are outstanding.
Quesadillas are always best served hot, so the cheese is melted, and the ingredients have a better flavor. Ingredients -
½ lb lean ground pork
¼ cup diced onion
1 minced garlic clove
½ cup sliced mushrooms
¼ teaspoon dried oregano
¼ teaspoon ground cumin
¼ cup chopped fresh cilantro
¼ cup grated Monterey Jack cheese or Cheddar
4 flour tortillas, 10 inches in diameter
½ minced jalapeño chili
½ cup salsa
Preparation:
Cook the pork, onion, mushrooms and garlic until browned in a nonstick skillet over a medium high heat.
Drain off any drippings and place the mixture in a bowl. Stir the oregano, cumin, cilantro and jalapeño into the pork mixture.
Wipe out the skillet with a paper towel and heat over a medium high heat.
Place one tortilla in the skillet and top with half the pork mixture. Sprinkle 2 tablespoons of cheese over the pork mixture and top with another tortilla. Cook on one side until browned, pressing down with a spatula or your hand.
This will take 2 or 3 minutes.
Turn it over to brown the other side.
Remove to a cutting board and cut into 8 wedges with a pizza cutter.
Repeat the process to make 8 more quesadilla wedges.
Serve with salsa.
