Quesadillas are a wonderful traditional Mexican recipe that can be changed around any way you like. Queso means cheese in Spanish, making a quesadilla a toasted flour or corn tortilla full of melted cheese. However, you are not limited to cheese in Mexican quesadillas.
You can put almost anything in yours, from vegetables and spices to precooked meats. You can even use fish to make quesadilla recipes - cod, tilapia, salmon, and tuna would all work and you can combine the fish with salad ingredients or stir fried vegetables. Chicken and turkey are also nice in quesadilla recipes. Favorite choices for fillings include olives, onions, tomatoes and mushrooms, though many other options are available. Brown your vegetables in butter before adding them into the tortilla or just put them in fresh. It is all a matter of taste. Mexican quesadillas are great for snacks, light lunches, and appetizers. You will love all the things you can do with them.
Serve a homemade Mexican quesadilla recipe with guacamole, mild or spicy salsa, or sour cream for dipping. You can cut them into thin wedges to serve as appetizers or serve them whole or halved. You can be very creative when making a Mexican quesadilla recipe.
Ingredients -
ten inch flour tortillas - equal to the number of people you are serving
Optional:
grilled chicken, shredded or diced
grated meltable cheese - mild and sharp cheddar, Monterey jack, queso, chihuahua, or others
butter or olive oil for toasting
mushrooms, sliced
fresh tomatoes, diced
black olives, sliced
avocado
peppers different colors
green onions, sliced
Preparation:
Heat a large, heavy skillet, such as a cast iron pan, over medium high heat.
Add a small amount of butter and spread it evenly over the pan, then place on large tortilla in the pan. Wait ten seconds, and then flip the tortilla, repeating until it begins to bubble.
Once air pockets have begun to form, sprinkle a small handful of grated cheese onto the tortilla, and then add additional ingredients.
Do not layer them on too thickly, or the tortilla will not fold properly.
Reduce heat and cover the pan.
Cheese should melt and the tortilla should brown without burning or smoking.
Remove from heat if this occurs.
Once cheese is melted, flip with a spatula and slightly brown the other side, then serve whole or cut into wedges, with a green salad, guacamole, sour cream, and/or salsa.
