Ingredients -

2 small flour tortillas
½ cup grated mozzarella, Monterey Jack or cheddar cheese
Knob of butter
1 sliced tomato
½ sliced onion
½ sliced green bell pepper
Salt and pepper
Mild salsa or sour cream

Preparation:

Place a nonstick skillet over a medium heat and add the butter.

Put the tortilla flat in the skillet.

Sprinkle over the cheese, tomato, onion and bell pepper.

Put a second tortilla over the top.

Fry each side until the cheese melts.

Use the salsa or sour cream for dipping.
