When you want a snack, you want a snack - and sometimes that means that you are not willing to take a lot of time or put a lot of effort into putting something together to satisfy those cravings. However, you do not have to spend much time in the kitchen to have a snack which is satisfying and a lot healthier than a bag of chips or some fast food takeout.
Quesadillas are a classic quick snack, one of many which come to us through the Mexican culinary tradition. You have probably made them before at one point or another and as long as you have a few basic ingredients on hand, you can make this easy, yet flavorful quesadilla recipe in just about five minutes.
Feel free to make some adjustments to the ingredients in this recipe; after all, if you are out of cilantro, you can omit it. If all you have is picked jalapeno rather than fresh peppers, you can substitute and still have great quesadillas. That is what is so great about quesadillas - they are very flexible.
Ingredients -
4 large (burrito size) flour tortillas
1 cup Monterey Jack and/or sharp cheddar cheese, shredded
½ small white or red onion, diced
2 tbsp chopped fresh cilantro
1 jalapeno pepper, diced
Salsa and lime wedges, for serving
Sour cream (optional)
Preparation:
Heat a cast iron skillet or griddle over medium-high heat while you shred the cheese, chop the cilantro, dice the jalapeno and onion, and slice the limes.
Warm each tortilla over the flame of a gas stove (or in a microwave if you have an electric stove) and fill each with cheese, onion, jalapeno, and cilantro.
Cook each side for about one minute or until the cheese melts and the tortilla is nicely browned.
Serve hot with salsa, lime wedges and sour cream, if using.
