These tasty chicken quesadillas include the flavors of olives, cheese, tomato, Cajun seasoning and chicken. Unlike rolled quesadillas, these are made by having one tortilla spread with the filling, the other tortilla topping it and then the whole thing is flipped over and browned gently.
When it is time to flip the quesadilla, you need to flip the whole thing over, which is where a very wide spatula comes in very handy. If you do not have one (or preferably two!) then you can flip the quesadilla on to a plate and then on to another plate. Slide it back into the pan from the second plate. It is rather like tossing a pancake - some people find it easy and others wonder why it is still sticking to the ceiling or broken up into pieces! Do not worry, practice does make perfect.
This chicken quesadillas recipe is browned gently until the filling is hot and the cheese is melted and wonderfully gooey. Use a pizza cutter to cut the quesadilla into wedges, then you can dip these tasty wedges in salsa or sour cream. Guacamole would be another tasty dipping sauce for these cheese chicken quesadillas.
Ingredients -
1 boned, skinned chicken breast half
Nonstick cooking spray
½ envelope taco seasoning
2 large flour tortillas
1 cup shredded Monterey Jack cheese
1 tablespoon diced jalapeño pepper
1 tablespoon diced tomato
1 tablespoon chopped black olives
½ teaspoon Cajun seasoning
Salsa and sour cream for dipping
Preparation:
Rub taco seasoning over the chicken and fry until cooked through in a lightly oiled pan.
Cut the chicken into ¾ inch cubes and set aside.
Spray one side of a tortilla with cooking spray and place sprayed side down in a pan over a medium heat. Sprinkle the cheese over the tortilla, followed by the tomato, olives, jalapeño and Cajun seasoning.
Lay the chicken evenly over the tortilla. Spray one side of the other tortilla with cooking spray and place it sprayed side up over the chicken.
Flip the whole quesadilla using 2 spatulas. Keep cooking until the cheese has melted and the tortilla is slightly brown.
Cut into 6 wedges with a pizza cutter and serve with a bowl of salsa and a bowl of sour cream for dipping.
