Quick Kids' Easy Mexican Quesadillas

This is a quick and easy snack or dinner for the kids. Mexican quesadillas are a great first cooking lesson for children who are old enough to work with the stove and a good snack for kids who are not quite old enough yet. Served with a mild tomato salsa, guacamole, sour cream, or chili con queso, they get even better.

Try substituting cheeses or adding in sautéed mushrooms and onions or fresh olives and avocado for even more unique tastes. Anyone can put together these great quesadillas. This is one Mexican recipe your kids will love, and can even learn to make for themselves. Just make sure they have enough supervision when using the stove. Serve along with a green salad to make it a complete meal.

 

Simple and Easy Mexican Quesadillas for the Whole Family

 
Ingredients -
 
2 tablespoons butter
8 flour tortillas
1 1/2 cups Monterey jack, shredded
1 1/2 cups cheddar, shredded
1/2 small can green chilies, drained and diced
 
Preparation:
 

Heat a nonstick skillet over medium high heat.

Spread one side of each tortilla with butter and place half of them buttered side down in the pan.

Divide cheese and chilies between the four tortillas and top with additional four tortillas. Place in hot skillet one at a time. Cook on both sides, flipping once, until brown and crisp.

Serve whole or cut into wedges.
