Refreshing Tomatillo Lime Salsa

The weather is hot and you feel like wilting. You need something refreshing to make you feel better. Dish up a bowl of roasted tomatillo lime salsa and you will be rejuvenated in no time. The tomatillos and jalapeno are broiled, giving them a mellow, nourishing flavor. Combined with crunchy onion bits, fresh lime juice and chopped mint leaves, you are in for a treat. The mint is cooling and refreshing. The lime juice is bright and wakes you up. The onion adds texture and bite. What more could you want in a salsa?

This is a delicious salsa with a tart, slightly spicy flavor. Add it to guacamole or a vegetable sauté to give it a tangy twist. Pile it on scrambled eggs, baked potatoes, nachos, or grilled meats as a condiment. It is absolutely wonderful with fish or pork. Pile it on tacos or in burritos; drizzle it across your enchiladas or chorizo.

Season this recipe to taste. Some will find it very mild, while others will find it spicy. Add more heat or cut back on the jalapeno, according to your taste. Roasted Tomatillo Lime Salsa

Ingredients -

8 small tomatillos, husked and rinsed
1 large jalapeno chili, stemmed
10 large fresh mint leaves
2 Tablespoons fresh lime juice
¼ cup white onion, finely chopped Salt

Preparation:

Preheat the broiler. Cover a baking sheet with aluminum foil. Remove the seeds from the jalapeno. Set the tomatillos and the jalapeno on the foil. Broil until they are soft and slightly blackened in spots; about 5 minutes per side. Let them cool.

Transfer the tomatillos, jalapeno, and any juices that leaked out into a blender or food processor. Add the mint and lime juice. Blend until you have a coarse puree.

Transfer the mixture to a bowl. Add the onion and stir. Season with salt to taste.
