When choosing tomatillos, you want to choose specimens that are still firm. Most tomatillo recipes use fruit that is still unripe. You will want to rinse them off after you remove the husk; they can be a bit sticky. For avocados, choose fruit that are firm but not hard. You want a slight give when you pick them up but not a lot. If the fruit is too soft, it is overripe. If it feels like a rock, it is under ripe. Finding the perfect avocados can take a little time, but the flavor is worth it. Avocados do not keep long, so use them as quickly as you can.
Ingredients -
3 medium tomatillos
1 Tablespoon fresh cilantro, chopped
½ small onion, coarsely chopped
½ teaspoon jalapeno pepper, seeded and chopped
½ teaspoon salt
¼ cup sour cream
1 ripe avocado, peeled and chunked
Juice of 1 lemon
1 clove garlic, coarsely chopped
Olive oil
Preparation:
Husk the tomatillos and rinse. Place them in a small pan and cover with water. Boil them for 3 to 4 minutes, until they become tender. Set them aside to cool to room temperature.
Place tomatillos, jalapeno, onion, cilantro, lemon juice, and salt in a food processor and pulse until smooth. Add the sour cream, avocado chunks, and a drizzle of olive oil. Process until combine.
Serve as a dip or condiment.
