Ingredients -
½ pound tomatillos, husked, rinsed and quartered
¼ to 1 whole fresh jalapeno pepper
2 cloves garlic, peeled
½ cup fresh cilantro
1 Tablespoon extra virgin olive oil
1 ripe avocado, peeled and diced
½ cup onion, minced
2 to 3 Tablespoons lime juice
Salt to taste
Preparation:
Place tomatillos, jalapeno, garlic, and cilantro into a food processor and coarsely chop them.
Pour the mixture into a bowl. Add the olive oil, onion, and avocado.
Add the lime juice and salt to taste. Stir gently.
