Super Simple Spring Onion Salsa Recipe

Spring onions are often confused with scallions, or green onions. In reality, spring onions are like new potatoes; they are harvested early (in the spring) instead of letting them grow to maturity by fall. They are a wonderful treat as the farmers' markets start up in the spring. These onions have a bulb about 1 or 2 inches in diameter, and the greens are much thicker than you would see on scallions.

Why not make these delicious, tender young onions the star of the show? Our spring onion salsa recipe is sure to bring a smile to your face. Not only is this recipe super simple, it tastes great. If you like onions, you will really appreciate this simple salsa that brings out the best in these new onions. Finely chop your spring onions and mix them with a finely diced cucumber. Top it all off with a little lemon juice and you are done. You can eat this delicious salsa immediately, or stick it away in your refrigerator until dinner is ready.

Spoon this delicious salsa over some grilled salmon or tuna. You can actually serve it with any dish that needs a little brightness. Put some on your gnocchi or eat it with chips. It tastes great with chorizo sausage in the morning, too. Put some in your tacos or burritos. It also tastes great with a grilled steak. Pile some on your baked potato. You can even use it as a tasty garnish on a bowl of thick soup or stew.

Spring Onion Salsa

Ingredients -

8 spring onions
½ large cucumber, seeded and finely diced
2 teaspoons lemon juice

Preparation:

Finely chop the spring onions and put them in a bowl. Add the diced cucumber. Pour in lemon juice and mix.

This recipe can be made ahead of time and chilled or served immediately.
