Guacamole is usually a pretty simple affair. Avocado, tomatoes, lime juice and perhaps some onions, cilantro and hot peppers. However, it's also a flexible recipe which allows a lot of room for cooks to innovate and discover new flavor combinations which appeal to their individual tastes.
Take this recipe for guacamole with olives, for instance. Black olives are an ingredient which you'll occasionally find in Mexican cooking, having been introduced to Mexico by Spanish colonists. While the idea of using olives in guacamole might seem a little odd at first, just give it a try; you may find yourself enjoying the combination a lot more than you would expect.
The richness of the olives and avocado blend well with one another, with the sharpness of the onion, cilantro and jalapeno, along with the acidity of the tomatoes and lime juice creating a harmonious whole. Ingredients -
4 ripe avocados, peeled and seeded
6 tomatoes, diced
2 jalapeno peppers, minced
1 large white or red onion, diced
½ cup black olives, pitted and sliced or chopped (canned olives are fine here)
¼ cup lime juice
2 tbsp garlic, minced (optional)
1 bunch cilantro, chopped
1 tbsp olive oil
Salt and black pepper, to taste
Preparation:
Though there are more ingredients in this guacamole recipe than you'll see in a basic recipe for guacamole, it really isn't much harder to make than even the simplest of guacamole recipes.
Start by chopping your ingredients (other than the avocados) and setting aside.
Peel and remove the seeds from your avocados and mash with a potato masher or pulse in a food processor until mostly smooth (but not a completely smooth paste).
Stir in the other ingredients and season to taste with salt and black pepper.
Serve at once or refrigerate, tightly covered and use within 1-2 days.
Serve with tortilla chips or bagel chips.
