Peaches are best in the summer when they are at their peak, though you can also use canned peaches for this recipe the rest of the year. Ingredients -
1 cup fresh pineapple, finely diced
1 ripe peach, diced
½ cup red bell pepper, finely diced
3 Tablespoons fresh mint, chopped
1 shallot, minced
2 Tablespoons lime juice
1 Tablespoon honey
Preparation:
Mix pineapple, peaches, bell pepper, mint, shallot, lime juice, and honey together in a bowl. Chill for at least an hour so flavors can combine.
Serve with chips or seafood.
