Fresh Corn Black Bean Tomato Salsa

This is a delicious fresh salsa recipe that you will want to make over and over. Full of fresh, grilled corn flavor, it is one of the best salsa recipes to use during the height of corn season. Black Bean and Corn Salsa

Ingredients -

3 to 4 small ears of corn
1 can (15 ounces) black beans, drained and rinsed
1 large tomato, seeded and diced
1 large garlic clove, minced
¼ cup red onion, minced
2 to 3 Tablespoons jalapeno or poblano pepper, finely minced
Juice of 1 lime
3 Tablespoons fresh cilantro, chopped
Salt and pepper to taste

Preparation:

Broil or grill the ears of corn until they are slightly charred; let them cool.

Combine the beans, tomato, garlic, onion, hot pepper, lime juice, and cilantro in a bowl. Slice the corn kernels from the cobs and add them to the bowl. Mix.

Refrigerate at least an hour before serving to allow flavors to mingle.
