Fabulous Black Bean Raspberry Salsa Recipe

Got lots of raspberries and do not know what to do with them? Make salsa! That is right, raspberries can become some fabulous salsa. Give this recipe a try the next time you pick up a couple pints of berries. They will take on a whole new dimension for you. Raspberries are not just for jam anymore!

This delicious salsa has a sweetness to it that complements to onion and jalapenos nicely. Between the berries and the bit of sugar, this salsa has just enough sweetness to make a statement. Serve it with some chips, tortillas, or as a dinner condiment. Try some on a bite of fish, chicken, pork, or beef. The flavors come alive in this combination.

The black beans provide a nice, solid base to this fruity salsa. As this recipe proves, fruit salsas do not have to be tropical. Raspberries provide a nice change of pace when you get tired of traditional tomato based salsas. This salsa can be used at any meal or as part of an afternoon snack. You can use frozen raspberries when the off season comes around so you can still enjoy this delicious black bean raspberry salsa. It is so simple to make; you can whip it up in minutes. Just be sure you have time to chill it before you serve. Remember to wash your hands after handling the jalapenos; any trace of the pepper oils on your hands can get transferred to your face and cause problems. You want to be able to enjoy your meal, not worry about your eyes watering from the peppers.

Raspberry and Black Bean Salsa

Ingredients -

2 cups fresh raspberries
¼ cup sweet onion, finely chopped
3 teaspoons jalapeno peppers, finely chopped
1 (15 ounce) can black beans, drained
1 clove garlic, minced
¼ cup fresh cilantro, chopped
½ teaspoon granulated sugar
3 Tablespoons fresh lime juice

Preparation:

Place the raspberries, onion, peppers, beans, garlic, cilantro, sugar and lime juice into a medium bowl. Mix them together gently.

Cover and chill in the refrigerator for a minimum of 1 hour.
