Ingredients -
1 (15 ounce) can black beans, rinsed and drained
1 cup ripe mango, diced
1 Roma tomato, rinsed, cored and chopped
½ cup orange bell pepper, cored, seeded, diced
½ cup yellow bell pepper, cored, seeded, diced
¼ cup onion, finely diced
1 Tablespoon jalapeno pepper, minced
1 Tablespoon fresh cilantro, chopped
1 clove garlic, peeled and minced
2 Tablespoons lime juice
1 Tablespoon red wine vinegar
Salt and pepper to taste
Preparation:
In a bowl, combine beans, mango, tomato, peppers, onion, jalapeno, garlic, cilantro, lime juice, and vinegar. Toss gently to combine.
