Turkey (pavo in Spanish) has a long history in Mexican cuisine, stretching back long before the arrival of the Spanish. Europeans brought chickens with them from the Old World; and while they have also become popular, replacing turkey in some recipes, turkey will always have an important place at the Mexican table.
This is just one of many Mexican turkey soup recipes out there, but it is one of the most delicious, especially if you are a fan of the smoky heat of chipotle peppers. It's a simple homemade soup which is a great winter warmer served on its own with some bread or tortillas, or any time of year that you feel like having a bowl of spicy turkey soup.
Great for any lunch or dinner, this sopa de pavo recipe is also wonderful served with some sliced avocado, tortilla chips, sour cream (if desired) and as with so many other Mexican dishes, lime wedges. There is no wrong way to enjoy this soup though, so have it any way you like.
Ingredients -
2 cups (about ½ lb) cooked turkey, diced
1 large yellow onion, diced
3 cloves garlic, minced
2 cups canned whole peeled tomatoes with juice, diced
4 cups turkey stock (or chicken stock)
2 chipotle chilies in adobo, minced, with a little adobo sauce
1 tsp oregano
¼ cup cilantro, chopped
2 tbsp olive oil
Salt and black pepper, to taste
Lime wedges, sliced avocado, sour cream, and tortilla chips, for serving
Preparation:
Sauté the onion and garlic in olive oil until the onion is translucent, about 5 minutes.
Add the tomatoes and juice, followed by the oregano, stock, and chipotles.
Bring to a boil, and then reduce to a simmer and cook until the tomatoes begin falling apart, another 10 minutes.
Add the cilantro and turkey and cook for another 10 minutes, season to taste with salt and black pepper and serve in bowls topped with avocado, with tortilla chips, sour cream and lime wedges on the side.
