1 lb large shrimp
3 chopped tomatoes
½ chopped onion
3 crushed cloves garlic
2 chopped chipotle chilies
Olive oil, as needed
Water, as needed
Salt, to taste
Preparation:
Fry the onion, tomato, chilies and garlic in olive oil, then add the shrimp.
Cover with water and simmer for a few minutes or until the shrimp are cooked.
Add salt to taste and serve immediately.
