Red Chilli Corn Chowder Recipe

Corn chowder is similar to New England clam chowder but, in this corn chowder recipe, bacon, and corn replace the clams. Chowder is like soup but a chowder is enriched with pork fat and thickened with flour or cornmeal and milk. It is a warming dish and the red chilies as well as the other spices make it supremely flavorful.

The onion and celery add crunch, the bacon is mouthwatering and the jalapeno and chipotle chilies work together to spice up this corn chowder recipe and add authentic Mexican flavor. You will find chilies in a lot of Mexican corn chowder soup recipes and chili is a good way to spice up easy corn chowder recipes quickly and well.

Corn Chowder with Chipotle

Ingredients -

1 onion, chopped
2 ribs celery, chopped
4 slices bacon, chopped
1 jalapeño pepper, chopped
1 teaspoon ground cumin
½ teaspoon smoked paprika
2 ears corn
1 cup milk
1 cup chicken broth
1 potato, diced
2 tablespoons cornmeal
1 teaspoon oregano
½ teaspoon ground chipotle chili powder
¼ cup cilantro, chopped
Salt and black pepper to taste
Sour cream to garnish
Parsley to garnish

Preparation:

Cut the kernels from one cob of corn and leave the other one intact.

Cook the bacon and set it aside. Drain all the grease from the pan except a tablespoon.

Add the celery, onion, jalapeño, chili powder, paprika, cumin, salt, and pepper. Sauté for about 6 minutes or until the onion is soft.

Add the potato and cook for 5 minutes. Sprinkle the cornmeal over everything and add the milk, broth, oregano, corn kernels, and cob of corn.

Bring to the boil then turn down to a low simmer for 30 minutes.

Remove the chowder from the heat and stir in the cilantro. Remove the cob of corn and divide between serving bowls.

Garnish each one with a spoonful of sour cream and a sprig of parsley.
