Pork is a relatively recent arrival to the Americas and as such, to Mexican cooking. However, as you probably know if you are even a little familiar with Mexican cuisine, you know that it is actually a very popular ingredient in Mexican dishes.
The domestic pig arrived in the New World along with the Spanish, but Mexican cooks have definitely made up for lost time by incorporating it into almost every kind of dish; in fact, some of the most famous dishes from Mexico happen to feature pork prominently.
One recipe which is a great example of the warm embrace Mexican cuisine provided to pork is this delicious guisado de puerco recipe. A spicy, tangy, and rich stew made from pork, tomatillos, onion, garlic, and spices, it is a classic which begs to be included in the American culinary tradition.
Ingredients -
3-4 lb boneless pork shoulder roast, trimmed cut into 1" pieces
˝ cup all-purpose flour
1 tsp salt
1 tbsp black pepper
1 tsp cumin
2 tbsp olive oil
1 large white onion, diced
3 cloves garlic, minced
2 cups fresh tomatillos, husked and diced
1 (7 ounce) can diced green chilies, drained
2 fresh jalapeno peppers, diced
1 tsp each oregano and marjoram
1 small bunch of cilantro, chopped
1 cup water
Chopped cilantro, lime wedges and sour cream (optional), for serving
Preparation:
Mix flour, salt, pepper, and cumin in a bowl and add the cubed pork, stirring well to thoroughly coat the meat. Heat olive oil over medium high heat and fry the pork, taking care to brown on all sides (this will take 15 minutes, possibly 30 if you need to do more than one batch). Set pork aside.
Sauté the onion until it begins to brown, stirring occasionally. Add the garlic, chilies, cilantro, oregano, marjoram, tomatillos, and water. Add the meat and bring to a boil before reducing to a simmer until the meat is tender, 1 to 1 ˝ hours. Serve with chopped cilantro, lime wedges, and sour cream, if desired.
