Slow Cooker Mexican Black Bean Soup Recipe

If you enjoy making slow cooker chili recipes, you will adore this mouthwatering combination of pork, beans, corn, chilies and more. This is a slow cooked soup so it will come out flavorful and delicious. The pork literally falls off the bone when it is done and the shredded, succulent meat goes back into the soup minus the bones. If you fancy something hearty and rich, this could be the perfect dish for you because it ticks all the boxes and has a marvelous consistency and taste.

Pork is perhaps not the most widely used meat in authentic Mexican recipes, although it can be used to make tacos, stews, and similar dishes. Mexican Bean Soup with Pork and Corn

Ingredients -

1 ½ teaspoons salt
1 lb dried black beans
Small can corn kernels
2 chopped slices bacon
2 finely chopped cloves garlic
1 tablespoon chopped chipotle chilies in adobo
1 tablespoon adobo sauce
1 teaspoon ground cumin
1 teaspoon tomato paste
6 cups water
2 bone-in, center cut pork chops
1 finely chopped onion

Preparation:

Rinse and pick over the beans.

Add them to the crockpot with the water, bacon, tomato concentrate, pork, garlic, chilies, salt, cumin, adobo, drained can of corn kernels and onion.

Cook on low until the pork chops are falling apart and the beans are tender.

This will take about 5 hours.

Take the bacon out and discard it.

Cut the pork meat off the bones and discard the bones.

Shred the pork and put it back into the crockpot, stirring it into the bean mixture.

Season with more salt if required and serve.
