While chili is traditionally a dish which does not contain much in the way of vegetables (next to none, in fact, in the traditional Texas version of the dish), but the basic idea of chili is adaptable enough to make even an entirely vegetarian chili a hearty and satisfying dish.
As proof, there is this vegetarian chili recipe. Full of beans, vegetables and more importantly, flavor, it is a meal in itself. It might not make vegans of hardcore carnivores, but it is a chili recipe which even dedicated meat eaters can love.
This recipe is a relatively basic vegetarian chili, but there is a twist in the serving - it is topped with a fried egg and some skillet toasted cherry tomatoes for a splash of additional flavor and a good helping of protein. It is a combination well worth trying; you may be surprised by just how well a sunny side up egg goes with a bowl of chili.
Ingredients -
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can black beans
3 (28 ounce) cans whole peeled tomatoes, crushed
1 tablespoon olive oil
1 yellow or red onion, diced
2 green bell peppers, chopped
2 jalapeno peppers, chopped
3 cloves garlic, chopped
1 teaspoon ground cumin
2 tablespoons dried oregano
¼ cup chili powder
Salt and black pepper, to taste
4 fried eggs
4 small bunches of cherry tomatoes on the vine, toasted in a dry skillet
Preparation:
Sauté the onions, garlic, peppers and jalapeno until they become tender, about 4 minutes, stirring occasionally.
Add the spices and continue cooking for another 1-2 minutes to infuse the oil and vegetables with their flavor.
Add the beans and tomatoes and quickly bring to a boil, then reduce to a simmer and cook, uncovered for 30 minutes.
Serve hot topped with a fried egg and a few cherry tomatoes toasted in a dry skillet and enjoy!
