Ingredients -
2 lbs beef stew meat, in 1 inch pieces
2 tablespoons butter
1 teaspoon Cajun seasoning
2 tablespoons olive oil
1 cup diced onion
½ lb thinly sliced button mushrooms
¾ teaspoon black pepper
1 ½ teaspoons salt
¼ teaspoon dried basil
¼ teaspoon dried oregano
¼ teaspoon dried thyme
2 tablespoons tomato paste
3 tablespoons all purpose flour
2 tablespoons cocoa powder
4 cubes bittersweet chocolate, shaved or grated
1 chopped red bell pepper
1 cup diced carrots
1 cup diced celery
1 lb small new potatoes, quartered
⅛ teaspoon ground allspice
3 cups beef or veal stock, at room temperature
Preparation:
Heat half the olive oil in a pot over a moderate to high heat.
Season the beef with a teaspoon of the salt, half a teaspoon of the black pepper and the Cajun seasoning.
When the oil is hot, add the beef, and brown it all over. You might need to do this in batches.
It will take about 7 minutes to brown it all. Transfer the browned beef to a plate using a slotted spoon.
Add the butter to the pan, then sauté the mushrooms for 5 minutes.
Add the onions and cook them for 5 minutes or until soft.
Add the flour and cook for 4 minutes, then add the tomato paste, beef stock, cocoa powder, oregano, allspice, thyme, meat, and basil.
Bring the mixture to a boil then turn down the heat and simmer it, covered, for 45 minutes. Add the carrots, celery, potatoes, and red bell pepper and cook for an hour longer.
Sprinkle the chocolate over the stew and serve.
