2 finely chopped onions
2 tablespoons red wine
15 oz can rinsed, drained kidney beans
15 oz can rinsed, drained black beans
6 chopped Roma tomatoes
1 finely chopped red bell pepper
1 finely chopped green bell pepper
1 finely sliced stalk celery
½ teaspoon olive oil
¼ teaspoon ground coriander
5 minced cloves garlic
¼ teaspoon cumin
¼ teaspoon dried oregano
¼ teaspoon cayenne pepper
½ teaspoon black pepper
1 cup frozen corn kernels
1 ½ cups chicken broth
1 teaspoon chili powder
1 teaspoon salt
6 oz can tomato paste
Preparation:
Heat the olive oil and wine in a skillet over a medium heat, then add the garlic and onions and cook until the onions are tender.
Transfer the mixture into a crockpot.
Add all the other ingredients and stir well.
Cover the crockpot and cook on high for 3 or 4 hours, or low for 6 to 8 hours.
