The Tastiest of Our Pork Chili Recipes

Beef and pork chili recipes are almost as popular as traditional beef chilies. Many people believe that chili con carne is a Mexican invention but actually, nobody is completely sure where it originated. Some people believe that a Spanish nun, who was called Sister Mary of Agreda, wrote the first chili con carne recipe in 1618.

Another claim is that Spanish settlers brought the recipe over with them in 1731. Some people believe that Texas cowboys invented this dish in 1850. We know it is not traditionally Mexican but we cannot know for sure whether any of these claims are the truth.

Beef, chili peppers, and water were the ingredients featured in the first chili recipes but many people use different ingredients today. Tomato paste and tomato sauce are often added to thicken the chili up and give it a sweet flavor. Cumin adds a smoky flavor and is found in many modern beef or beef and pork chili recipes. When you cook chili, taste it as you go. You might find that it requires a little more hot sauce or cumin, or maybe a little cocoa powder for richness or extra salt.

Pork Chili with Bacon and Beer

Ingredients -

2 cups beef broth
5 crushed cloves garlic
6 strips bacon
3 tablespoons olive oil
1 lb chopped pork
1 teaspoon ground cumin
1 teaspoon ground coriander
1 tablespoon cocoa powder
2 lbs ground beef
1 finely sliced onion
2 tablespoons tomato paste
½ green bell pepper, de-seeded, and chopped
½ yellow bell pepper, de-seeded, and chopped
2 teaspoons dried oregano
½ teaspoon chili powder
½ teaspoon cayenne pepper
14 oz can crushed tomatoes
¾ pint beer
1 lb can kidney beans, drained and rinsed
1 lb can cannellini beans, drained and rinsed
Salt and pepper, to taste

Preparation:

Preheat the oven to 350 degrees F.

Heat 1 tablespoon of the oil in a skillet and fry the ground beef until it is browned.

Transfer it to a big pot.

Brown the bacon and pork together.

You might need to add some more oil.

Transfer this mixture to the pot with the beef.

Add the garlic and onion to the skillet and cook until tender.

Add the cayenne, coriander, cumin, and chili powder and stir them in.

Transfer this mixture to the pot too.

Add the beef broth, tomato paste, beer, tomatoes, cinnamon, oregano, and cocoa powder and bring the chili to a boil.

Cover the pot and simmer it for 2 ½ hours.

Add the beans and bell peppers and cook for 20 more minutes.
