A lot of people mistakenly believe that all chili con carne recipes contain beans but that is untrue. The traditional and authentic recipe for chili con carne contained just chilies, water, and beef. Beans, tomatoes, cumin, and the rest are modern additions. In some places, such as Texas, adding beans to chili con carne is a big no-no because Texans view beans as an unnecessary filler, believing that they do nothing but allow the chef to skimp on the meat and they detract from the flavor of the chili recipe itself.
If you have never tried any chili without beans recipes, you might like to have a go at this one. The beef, onion, garlic, tomatoes, and seasonings give the recipe plenty of rich flavor and you will not miss the beans at all. Serve this flavorful chili over rice or by itself, perhaps with some grated cheese or sour cream on top. A sprig of fresh cilantro, basil, or parsley is not strictly necessary but would look good as a garnish, especially if you have company coming over to enjoy your homemade chili.
There are so many different chili recipes and so many ways of making this wonderful dish that of it is up to you how you do it. If you want to add beans (and you are not expecting any Texans for dinner), go ahead and add them. If you like bell peppers, celery, mushrooms or cocoa powder in your chili con carne, add those too. The great thing about chili recipes is that you can tinker around with them, tailoring them exactly to your needs and preferences.
