Chili Con Carne with Beans Recipe

Chili is an incredibly flexible kind of recipe. The basic formula involves either ground or diced beef, spices, chili peppers and possibly beans and/or tomatoes. Within that basic framework, there are all kinds of different things that cooks can do to shake things up.

This recipe is one example of the flexibility of chili. Using both ground beef and ground pork, this recipe includes kidney beans, tomatoes, green peppers, celery, and mushrooms along with the usual onion, garlic and hot peppers to give this dish a fuller, more well rounded flavor profile.

It is a delicious chili recipe which provides a little more nutrition than the average bowl of this spicy beef stew, while making absolutely no compromises on flavor or satisfaction. Once you try this chili, you will find that the added vegetables actually help bring out the hearty flavors of the beef and pork for a chili your family and friends will beg you to prepare again and again.

Beef, Pork Chili Con Carne with Vegetables

Ingredients -

2 ˝ lb. ground lean chuck
1 lb. ground pork
2 (15 oz) cans kidney beans, rinsed and drained
6 cloves garlic, minced
1 stalk celery, diced
1 cup sliced mushrooms
1 green pepper, diced
2-3 jalapeno peppers, diced
2 yellow or red onions, diced
1 (12 oz) can or bottle of dark beer (water may be substituted)
1 8 oz can tomato sauce or diced tomatoes
1 cup water
3 tbsp chili powder
2 tbsp cumin
1 tsp paprika
2 tsp oregano
1 tsp unsweetened powdered cocoa
2 tsp cornmeal
2 tbsp olive oil

Preparation:

Start by heating the olive oil in a stockpot over medium heat; sauté the onions, garlic, mushrooms and celery until the onions become translucent, stirring regularly.

Add the ground beef and pork and cook until browned, then add the spices and cook for another 1-2 minutes.

Add the water and beer (if using) and bring to a boil.

Reduce to a simmer and cook, uncovered for 45 minutes to an hour, or until the green peppers are tender and the flavors have fully blended. Serve hot with freshly made biscuits.
