Chicken Chili with White Beans and Jalapeno

If you are looking for tasty chicken chili recipes, you will enjoy the following recipe. This chili is quite hot, even if you are used to hot food, so you might want to tone down the spices a bit unless you enjoy very spicy food. You can swap the jalapenos with mild green chilies if you like. Also, feel free to switch one of the chicken broth cans for a can of cream of chicken soup, just to give this chili a creamier feel.

If you want to use a crockpot to make this chicken chili recipe, you can cook it on high for four hours and it will come out fine. Add a can of white beans if you want this chili to be thicker. Another kind of beans will go nicely too but if you like the more watery consistency, perhaps for soaking up your cornbread muffins better or to make a sauce for your rice, leave the recipe as it is. This is good served over rice, by the way.

The oregano and cilantro add an herby flavor to this flavorful chili and the jalapenos, cayenne, cumin and green chilies add heat to it. If you like to serve something cooling and creamy with your chicken chili recipes, make sure you have plenty of cheese and sour cream on hand because it goes very nicely with this.

How to Make a Fiery Hot Chicken Chili Recipe

Ingredients -

1 chopped onion
1 tablespoon vegetable oil
2 teaspoons ground cumin
4 oz can diced jalapenos
3 crushed cloves garlic
1 teaspoon ground cayenne pepper
⅔ cup grated Monterey Jack cheese
1 teaspoon dried oregano
4 oz can chopped green chilies
2 cans chicken broth, 14 ½ oz each
3 cans white beans, 15 oz each
3 cups chopped cooked chicken breast
Chopped fresh cilantro, to serve
Sour cream, to serve (optional)

Preparation:

Heat the vegetable oil in a pot over a low to medium heat, then cook the onion until it is tender.

Add the jalapenos, garlic, cumin, cayenne, oregano, and green chilies and keep cooking for about 3 minutes, stirring the mixture all the time.

When everything is tender, stir in the chicken, beans and broth.

Simmer the chili for 15 minutes, stirring a few times. Serve the chili with the cilantro and cheese sprinkled over and some sour cream too, if you like.
