Ingredients -
8 taco salad shells
1 lb ground beef
3 bacon rashers, diced
2 garlic cloves, minced
2 red onions, chopped
16 oz can refried beans
14 ½ oz can diced tomatoes in juice
1 jalapeño pepper, chopped
1 teaspoon ground cumin
1 teaspoon salt
3 tablespoons chili powder
½ head lettuce, shredded
4 tomatoes, chopped
16 black olives, sliced
½ cup grated Mexican cheese
Lime wedges, guacamole, and sour cream to serve
Preparation:
Prepare the taco shells as per the instructions on the package and set them aside.
Cook the bacon in a skillet until crispy and drain it on paper towels.
Cook the beef, garlic, most of the onions, jalapeño and all the seasonings in the drippings until the beef is browned.
Stir in the tomatoes and bring the mixture to a boil. Turn the heat down, cover, and simmer for 10 minutes.
Stir in the beans and heat everything through.
Divide the meat mixture between the salad shells.
Top with the lettuce, tomatoes, olives, cheese, and the rest of the red onion.
Serve the lime wedges, guacamole, and sour cream on the side.
