Shrimp Enchiladas Recipe (Shrimp with Chili) Salad

Shrimp salads of all kinds are a popular summer dish. Cooling, refreshing, and satisfying all at the same time, they make a great lunch or dinner for a warm spring or summer day. They are also delicious and especially when they are as good as this Tex-Mex style shrimp enchilada (as in with chili, not as in fried burrito) salad, they are irresistible to any shrimp lover.

Shrimp is often served with spicy sauces or marinades in cuisines ranging from Europe to Asia and of course, the Americas, with Mexico being just one example. If you like your shrimp on the hot side, this is one recipe which you are sure to love.

Here, shrimp is paired with cilantro, garlic, Serrano peppers, lime juice and clamato juice (available at most grocery stores - simply mix tomato juice with a little clam juice if you don't see clamato at your local markets). It is a winning combination which makes for a perfectly refreshing summer meal.

Spicy Shrimp Salad

Ingredients -

2 pounds cooked shrimp, peeled and deveined
3 cloves garlic, minced
1 red onion, diced finely
2 - 4 Serrano peppers, minced (adjust quantity to taste)
¼ cup cilantro, chopped
1 ½ cups clamato juice
¼ cup fresh squeezed lime juice
salt and black pepper, to taste
1 ripe avocado - peeled, pitted and thinly sliced
Lime wedges and tortilla chips, for serving

Preparation:

Mince the garlic, chop the onion and cilantro, and add to a large non-metallic bowl along with the shrimp.

Cover with lime juice, then clamato juice and stir well.

Refrigerate, covered for at least 3 hours.

Season to taste with salt and black pepper, stir again, and return to the refrigerator for one more hour.

Top with avocado slices and serve, along with tortilla chips and lime wedges.
