Ingredients -
2 packages arugula or 2 chopped Bibb lettuces
4 vine-ripened tomatoes, in wedges
4 oz grated Mexican cheese blend
1 thinly sliced small red onion plus 2 tablespoons chopped red onion
1 bag broken tortilla chips
Juice from 3 limes
1 avocado
3 tablespoons extra virgin olive oil
3 tablespoons water
1 teaspoon salt
2 tablespoons fresh cilantro
Preparation:
Wash and drain the lettuce and divide it between 8 serving plates.
Arrange the tomatoes and sliced red onion on top.
Peel the avocado and remove the stone.
Add it to a food processor with the lime juice, cilantro, salt, water, and chopped red onion.
Puree the mixture until it is smooth, and then add the oil gradually.
Adjust the seasonings and pour this dressing over the salad.
Sprinkle the cheese and tortilla chips over the salad and serve.
