Simple Mexican Seven Layer Salad with Ham and Peas

An Easy Recipe for Mexican Layered Salad

Ingredients -

1 ½ cups chopped ham
2 cans sweet peas (15 oz each)
1 cup thawed or canned corn kernels
1 finely chopped red bell pepper
6 finely sliced green onions
2 stalks finely sliced celery
1 pot sour cream
2 tablespoons red wine vinegar
1 tablespoon olive oil
1 teaspoon Dijon mustard
¼ teaspoon black pepper
¼ teaspoon garlic powder
⅓ cup V8 or vegetable juice

Preparation:

Arrange the celery in the bottom of a glass serving bowl, followed by a layer of corn, a layer of ham, a layer of peas, and a layer of red bell pepper.

Shake the vinegar, olive oil, mustard, pepper, garlic powder, and vegetable juice together in a jar with a lid, to make the dressing.

Pour this dressing over the salad and either leave it in layers or stir it a bit, to combine the ingredients.

Pour the sour cream over the top layer and finally scatter the green onions over the top.

Grind some black pepper over the salad and serve it chilled or at room temperature.
