Mexican Bean Salad with a Chili Citrus Dressing

Ingredients -

1 lb cooked black beans
1 ½ cups cooked corn kernels
⅓ cup minced fresh cilantro
¾ cup finely sliced green onions
1 ½ cups chopped tomato, de-seeded
¾ teaspoon chili powder
3 tablespoons lime juice
½ cup vegetable oil
¾ teaspoon salt
¾ teaspoon cumin
1 ½ tablespoons lemon juice

Preparation:

Combine the beans, corn, cilantro, green onions, and tomato in a bowl.

Whisk the chili powder, lime juice, salt, cumin and lemon juice together, and then gradually whisk in the oil.

Pour this dressing over the bean mixture and toss.

Chill for an hour, and then serve with tortilla chips for dipping.
