Ingredients -
14 oz can tuna in water, drained
For the Dressing:
1 chopped onion
14 oz can mixed beans, drained and rinsed
1 chopped red chili pepper
½ bunch sliced green onions
4 de-seeded, chopped tomatoes
½ teaspoon cumin
¼ cup lemon juice
½ cup olive oil
2 cloves garlic
2 fresh green chilies
3 sprigs fresh cilantro
3 sprigs fresh parsley
¼ cup water
Salt and pepper, to taste
Preparation:
Combine the chili, beans, green onions and tomatoes, and then divide this mixture between 4 serving plates.
Flake the tuna over the salad.
Put all the salad dressing ingredients in a blender and puree it until the chili and onion are finely chopped.
Pour this dressing over the tuna salad and serve immediately.
