Mexican Grilled Vegetable Salad

Many of us look forward to grilling season all year - and when it arrives, it may be hard to find us in the kitchen unless we are preparing something to go on the grill! There is a place for grilled meats or vegetables in almost any kind of dish; as this Mexican grilled vegetable salad recipe shows, even salads can benefit from the addition of grilled vegetables.

This is a great summer salad for anyone, but is especially attractive to those who simply cannot tear themselves away from the grill when springtime rolls around. It is incredibly simple to prepare and can be thrown together as a side dish for any spring, summer or early autumn barbecue with ease. With this recipe, you can be in and out of the kitchen in a matter of minutes, giving you more time to spend outdoors grilling, and just enjoying the weather and the company of your family and friends.

With succulent grilled zucchini, mellow grilled red onion, the surprising study in contrasts which quickly grilled tomatoes provide and some creamy, tangy Monterey Jack cheese to tie it all together, this is a salad that any grill lover will be an instant fan of.

Fresh Grilled Vegetable Salad

Ingredients -

Green or red leaf lettuce or spring greens mix (do not use iceberg lettuce)
1 cup Monterey jack cheese, shredded
1 large zucchini, sliced into ¼ thick pieces
1 large tomato, sliced into wedges
1 red onion, sliced into 1" pieces
¼ red bell pepper, sliced very thin
Olive oil for grilling
Salt and black pepper, to taste
Lime wedges, for garnish

Preparation:

This is one of the easiest recipes to prepare, even as salads go. Simply slice your onion, zucchini and tomato and brush with olive oil and sprinkle with a little salt and black pepper and then grill. Do not overdo the tomato - the idea is to get a hint of char on the outside without overcooking the inside and making it too soft.

Once your vegetables are grilled, simply add a portion of the veggies to each plate, along with the lettuce or mixed greens and top with ¼ of the cheese and a few thin slices of red pepper, then garnish with a lime wedge.
