Easy Mexican Salad with Tuna and Cilantro

This simple salad takes about five minutes to prepare. It might be a basic recipe but this easy Mexican salad is full of flavor. One of the Easiest Mexican Salad Recipes

Ingredients -

14 oz canned tuna
7 oz canned kidney beans
7 oz can corn kernels
½ diced red onion
4 chopped cornichons

For the Cilantro Dressing:

1 tablespoon lime juice
¼ cup extra virgin olive oil
½ cup cilantro
⅛ teaspoon garlic powder
⅛ teaspoon Mexican oregano
¼ teaspoon salt

Preparation:

Drain the tuna, kidney beans, and corn and stir them together with the red onion and cornichons.

Combine the cilantro dressing ingredients in a blender and blend on a low speed until well mixed.

Pour the dressing mixture over the salad and toss well.

Serve immediately.
