Chilled Mexican Salad with Tomatoes and Beans

This salad is a very simple combination of traditional Mexican salad ingredients like beans, corn, tomatoes, onions and more, dressed with a tangy homemade dressing. You will need to take the seeds out of the fresh tomato before using it because they can make the salad a bit soggy. To take the seeds out, the easiest method is to cut the tomato horizontally in half, then take out the stem. Hold it half over the sink and scrape out the seeds with a teaspoon. Chop the tomato and use it in the Mexican salad recipe.

The strips of lime peel and orange peel add another splash of color to this already colorful Mexican salad recipe and this is an elegant and delicious salad, which would be just as suitable for a buffet as for a tasty lunchtime snack. Serve this salad with tortilla chips or corn chips if you like. If you want to add something else to it, chopped chicken or shrimp would be good. Some sliced celery also adds a nice crunch.

Tasty and Easy Mexican Salad

Ingredients -

8 oz canned corn kernels
1 ½ lbs canned great northern beans
¼ teaspoon salt
4 sliced green onions
4 tablespoons minced fresh cilantro
⅛ teaspoon black pepper
¼ chopped red onion
3 tablespoons red wine vinegar
1 diced yellow bell pepper
1 chopped de-seeded tomato
½ cup tomato salsa
Strips of lime peel and orange peel, for garnish

Preparation:

Drain the corn and beans.

Rinse the beans.

Stir the corn, beans, onion, bell pepper and tomato together in one bowl and the salt, pepper, vinegar, salsa and half the cilantro in another.

Combine the two mixtures and toss well.

Cover the salad and chill it for at least an hour in the refrigerator so the flavors can blend.

Garnish with the citrus rind strips and serve, garnishing the serving plate with the remaining cilantro.
