Ingredients -
2 cups cooked chicken, chopped
½ red bell pepper, chopped
½ head lettuce chopped
½ apple, cored and chopped
¼ cup red onion, chopped
8 green olives, halved
6 tablespoons mayonnaise
2 teaspoons lime juice
1 teaspoon honey
Salt and pepper
4 flour tortillas
Fresh basil to garnish
Preparation:
Combine the chicken, bell pepper, lettuce, apple, onion, and olives in a bowl.
Mix together the mayonnaise, limejuice, honeys in another bowl, and taste it. Add more honey if it is too sour or more limejuice if it is too sweet.
Add salt and pepper to taste.
Heat a non-stick skillet to medium high and brown a tortilla on both sides, keeping it moving so it does not burn. If you get a bubble, press the tortilla down with a spatula but keep it moving.
Sprinkle with salt.
When both sides of the tortilla are covered in brown spots, remove from the pan and put it in a big bowl.
Shape it by putting a smaller bowl on top. Be gentle so it does not crack.
Repeat with the other tortillas to make the tortilla bowls.
When the tortilla bowls are cool, combine the salad with the dressing and divide the mixture between the 4 tortilla bowls.
Garnish with basil.
