Sopes Lobster Recipes

If you have never had a sope before, you are not alone. Most Americans have probably never even heard of sopes, much less eaten one. At this point, you are probably wondering just what a sope is - it is a fair question. A sope is a sort of cousin of the tortilla; however, rather than being thin and being used to fold around other foods, it is a small, shallow cup which is filled, usually with the same kind of ingredients used for tacos.

A sope is generally a pretty simple affair, much like tacos. There is a filling, some cilantro and onion, a squeeze of lime and perhaps some salsa; but this recipe is a little more dressed up to that, thanks to the inclusion of lobster and guacamole, two ingredients which go together wonderfully, it turns out.

In case you are wondering where to find sopes to use for this recipe, start with your local Mexican groceries. Sopes are a regional dish, so you may not find them at every Mexican grocer, but if you have more than one in your area, it is likely that you will be able to find them.

How to Make Deep Fried Stuffed Jalapenos

Ingredients -

Lobster meat, cooked (either boiled in water with a little beer or grilled, your choice)
8 sopes
Guacamole (premade or from scratch)
1 small white or yellow onion, diced fine
Chopped cilantro, a pinch per sope
Lime wedges, thinly sliced jalapeno peppers and salsa, for serving

Preparation:

In this recipe, we have left some things open to the cook's preferences.

While grilled lobster is always great, some people prefer to simply boil their lobster briefly in water with a little beer added.

Ultimately, this is up to you.

However, what you will need to do for sure is to dice the onion, slice a jalapeno, cut a few limes into wedges, chop some cilantro and warm up the sopes (you can do this in the oven or in a microwave).

Once the lobster is cooked, fill each sope with a little guacamole, followed by lobster, then a little diced onion and a pinch of cilantro.

Serve hot with salsa, lime wedges, and jalapeno slices.
