Recipe for Mexican Steak in a Lime and Oregano Marinade

If you are a steak lover, you are really going to enjoy this delicious Mexican feast. Your mouth will be watering by the time you cook the steak because it needs to marinate for twenty four to forty eight hours! If you have made a Mexican skirt steak recipe or a flank steak recipe before, you will be aware that these tougher cuts of steak need to marinate in order to be tenderized, so plan this meal a day or two in advance.

This is a healthy recipe and, without the sauce, the steaks are less than 170 calories each, so if you are watching your figure you can serve this Mexican steak recipe with a green salad and perhaps a baked potato. You will want some of the sauce though, because it is so tasty. You might think that three chipotles is quite a lot to add to the sauce but actually chipotles are not that hot, especially the seeded, canned ones, so feel free to add an extra one if you want.

The beef flank steak can be replaced with Mexican skirt steak if you want to make a Mexican skirt steak recipe. Just do not use a top quality cut for this recipe because the long marinating time will turn a good cut to mush.

The Best Mexican Steak Recipe with Creamy Chipotle Sauce

Ingredients -

1 lb beef flank steak
1 teaspoon chili powder
½ cup lime juice
1 tablespoon dried oregano
4 chopped cloves garlic
Fresh parsley, to serve
Tortilla chips, to serve

For the Chipotle Sauce:

2 tablespoons all purpose flour
2 tablespoons butter
3 minced cloves garlic
1 teaspoon cumin
1 cup water
1 teaspoon dried oregano
1 cup beef broth
3 seeded, minced canned chipotle chilies plus 2 tablespoons adobo sauce from the jar
2 tablespoons sour cream

Preparation:

Cut the steak into 4 pieces.

Combine the chili powder, lime juice, oregano, and garlic in a Ziploc bag, and then add the meat.

Refrigerate it for 1 or 2 days. To make the sauce, melt the butter in a skillet and stir in the flour.

Cook this roux until it goes pale brown, then take it off the heat and stir in the broth gradually.

Put the skillet over a medium heat and whisk in the water.

Add the garlic, adobo sauce, chilies, and spices.

Simmer the sauce uncovered for about 20 minutes, then take it off the heat and whisk in the sour cream.

Take the steak out of the marinade and broil it a few inches from the heat source for about 5 minutes per side, or until the meat is done the way you like it.

Serve the steak with the chipotle sauce and some tortilla chips and parsley on the side.
