Tasty Mexican Pork Sirloin Roast and Black Beans Recipe

Crockpot Pork Sirloin Roast Recipe with Black Beans

Ingredients -

1 lb boneless pork sirloin roast, in 1 inch cubes
1 lb canned (or cooked) black beans
2 cups water
16 oz stewed tomatoes, chopped
2 teaspoon salt
1 teaspoon chili powder
1 teaspoon ground coriander
1 onion, chopped
1 garlic clove, minced
⅛ teaspoon black pepper
4 sprigs fresh cilantro, to garnish

Preparation:

Toss the coriander, salt, chili powder, and pork together.

Brown the onion and garlic in an ungreased skillet with the spiced pork.

Put the tomatoes, tomato juice, and beans in the crockpot and add the meat mixture, water, and black pepper.

Cover and cook on low for 9 hours.

Serve with rice, with the fresh cilantro on top.
