Pescadito Frito - A Mexican Style Fried Fish Recipe

"Pescado frito" is Spanish (or Mexican) for fried fish, and "pescadito" means little fish. If you are looking for an easy Mexican style fried fish recipe, the following recipe is ideal. You can use any firm white fish to make this pescado frito recipe, such as halibut, sole, tilefish, striped bass, cod, or red snapper. Perhaps there is some discounted fish in the grocery store, in which case this will work out a very economical recipe, as well as a truly tasty and dazzlingly flavored one.

Sometimes very small fish, like anchovies for example, are used to make a Mexican style fried fish recipe, but other times fish fillets, steaks or even whole fish (with the head and tail left intact) are used for this dish. It just depends on personal preference. Of course, the bigger the piece of fish you are using, the longer it will take to cook.

Fish usually goes opaque when it is done and you can flake it with a fork, so if you are not sure whether or not your piece of fish is cooked through, just cut into the middle and see if it is opaque or still a bit translucent. Nothing is worse than overcooked fish though because it goes dry, so take care not to cook it too long.

Easy Mexican Style Fried Fish Recipe

Ingredients -

2 lbs firm white fish steak, in 4 pieces
All purpose flour, as needed
4 tablespoons vegetable oil
1 cup dry red wine
1 bay leaf
⅛ teaspoon cayenne pepper
⅛ teaspoon allspice
2 finely chopped onions
½ finely chopped green bell pepper
½ finely chopped yellow bell pepper
2 minced cloves garlic
4 peeled and chopped tomatoes
Salt and black pepper, to taste

Preparation:

Use the salt and black pepper to season the fish steaks, and then coat them lightly in flour.

Shake the fish to remove the excess flour. Heat the oil in a skillet.

Sauté the fish until it is golden brown on both sides, then keep it warm on a platter.

Sauté the garlic, bell peppers and onions until they are tender, in the oil remaining in the skillet.

You might need to add a little more oil.

Stir in the allspice, cayenne, bay leaf, tomatoes and some more salt and black pepper.

Sauté the mixture, stirring occasionally, until it is well blended and thick.

This should take about 5 minutes.

Add the wine and bring the mixture to a simmer.

Add the fish and simmer for 2 minutes serve the fish with the sauce ladled over it.
