Mexican Beef Shish Kabob Recipes

There is nothing that many people like better than grilled meat, especially combined with fresh grilled vegetables. For these people, it is hard to beat kabobs as a meal option, particularly in the summer when the weather is perfect for grilling. They are incredibly easy to make; in many cases, they can be prepared in a matter of minutes (not counting the time it takes the grill to be ready, of course).

The recipe which follows, however, does take a little bit of prep time - but even this is easy, since most of the time involved is for marinating. You can still make this delicious Mexican inspired beef kabob recipe while spending only a minimal amount of time in the kitchen. It's all for the best, since it leaves more time for enjoying the results of your culinary efforts and of course, simply enjoying some time outdoors with family and friends.

If you are lucky enough to have a grill on your deck or in your backyard and do not mind a little chill, there is no reason you have to wait until warmer weather arrives to feast on these Mexican-style kabobs, however. After all, great eating knows no season - and your dinner guests are sure to be impressed by this savory, slightly spicy recipe regardless of the time of year.

Mexican-Style Beef Kabobs

Ingredients -

2 pounds top round London steak cut into 2-inch cubes
1 green and one red bell pepper, cut into 2 inch pieces
1 large onion (your choice), cut into 2 inch pieces
½ cup extra virgin olive oil
½ cup balsamic vinegar
Juice of 6 limes
4 cloves of garlic, minced
1 Serrano or jalapeno pepper, cut into rings
2 tsp dried oregano (use Mexican oregano if available)
1 tsp cumin
½ cup cilantro, chopped
Bamboo skewers

Preparation:

Combine all ingredients in a large bowl, cover and refrigerate for 6-8 hours or overnight. Do not rush this one, since the end result will be far better if the ingredients are allowed plenty of time to take in the flavors of the marinade.

Before starting up the grill, soak your skewers in ice water; allowing them to soak for 10-15 minutes will help prevent breakage when you turn the kabobs or remove them from the grill. Put together your skewers and grill until the beef reaches your desired level of doneness, then serve at once with lime wedges, avocado, sliced jalapenos, tortillas or any other garnishes you like.
