Black Beans and Rice Recipe

Rice and black beans are a staple of many different cuisines. From the Caribbean (especially Cuban cooking) to Mexico, from the American southwest to Spain, a dish of black beans and rice is a regular and very welcome presence at the dinner table.

Also known by the somewhat politically incorrect name of Moros y Christianos, rice and black beans have a long history of being served together - and why not? These two ingredients were made to be enjoyed together and if you have never had a good dish of black beans and rice before, you are about to discover just how wonderful it can be.

This recipe is a very basic one, seasoned simply with onion, bell pepper, garlic and salt and pepper. Despite its simplicity, this dish has a wonderfully complex flavor which belies its popular status as the food of the common man - in any case, this is a dish which has a place at any table and complements almost any meal.

Basic Beans and Rice Recipe

Ingredients -

1 cup long grain white rice
1 (15 oz) can black beans, rinsed and drained
1 small white onion, diced
1 small green bell pepper, diced
1 clove garlic, minced
2 cups water
1 Tbsp olive oil
2 cups water
Salt and black pepper, to taste

Preparation:

Sauté the bell pepper, onion, garlic and rice in olive oil, stirring regularly, until the onions become translucent and the rice is thoroughly coated with oil.

Add the water and bring to a boil, then reduce to a simmer and cook, covered for 15-20 minutes or until the water is totally absorbed and the rice is tender.

Allow to rest for five minutes and fluff with a fork and season to taste with salt and black pepper.

Serve as a side dish with anything you like - or enjoy it on its own and appreciate the wonder which is black beans and rice.
